We’re all trying to be a bit healthier and consuming more organic goods. Us wine lovers are also attempting to be as healthy as possible while enjoying great grapes.
The 2019 Organic Cabernet Sauvignon / Merlot is a 50% Cabernet Sauvignon and 50% Merlot blend. The grapes are sourced from the best organic vineyards across the Western Cape and a third of the grapes come directly from the estate. The grapes were sorted and destemmed and a wild, spontaneous fermentation took place ina combination of concrete tanks and open top stainless-steel fermenters.
35% of the wine spent 10 months in older oak barrels and foudré, after which the assemblage was made up and the wine was bottled. Tasting NotesThe nose has distinct mulberry, cherry and black current characters, along with cedarwood and spices. Layers of black fruit, cherries, spices and liquorice develop on the palate, making the wine very enjoyable. Well balanced and structured, with juicy sweet tannins, but a dry finish This wine is smooth and approachable now, but can be cellared until 2022.
